Spinach Roll Ups with Lime Chutney
Ingredients
Fresh Spinach
1/4 Onion
1/2 lime (cut into 1/4 in pieces, include rind, discard seeds
1 piece of Ginger, cut into 1/8 in slices
3-4 tbsp shredded unsweetened coconut
3-4 tbsp whole peanuts (roasted, unsalted)
Lime Chutney
1 Lime
1 tbsp coarsely chopped Ginger
1/2 cup chopped Onion
1/3 cup brown sugar or Honey
1/2 cup Peanuts
1/4 cup shredded, unsweetened Coconut
Combine all ingredients in a blender. Process until it’s the consistency of a thick sauce.
Remove and discard spinach stems . Clean the leaves and dry.
Prepare onion, lime, and ginger. Place each item in a small individual dish , cover, and refrigerate until use.
Just before serving, arrange spinach on a large plate. Place 1 piece each of onion, lime, and ginger on the lower center of each leaf. Add a pinch of coconut and 1 or 2 peanuts. Place the chutney in a small bowl, with a spoon, at the center of the plate.
To eat, place a delicate mound of chutney on top of the little pile of ingredients in the center of the leaf. Roll it up, tucking in the sides and pop into your mouth!
Kale and Brussel Sprout Salad
Ingredients
1/4 cup fresh lemon juice
2 tablespoons Dijon mustard
1 tablespoon minced shallot*
1 small garlic clove, finely grated*
1/4 teaspoon kosher salt plus more for seasoning
Freshly ground black pepper
2 large bunches of Tuscan kale (about 1 1/2 pounds total), center stem discarded, leaves thinly sliced*
12 ounces brussel sprouts, trimmed, finely grated or shredded with a knife
1/2 cup extra-virgin olive oil, divided
1/3 cup almonds with skins, coarsely chopped
1 cup finely grated Pecorino
Combine lemon juice, Dijon mustard, shallot, garlic, 1/4 teaspoon salt, and a pinch of pepper in a small bowl. Stir and set aside. Mix kale and brussel sprouts in a large bowl.
Add 1 TBSP olive oil to skillet and hear. Add almonds and stir frequently until golden brown in spots, about 2 minutes. Transfer nuts to a paper towel-lined plate and sprinkle lightly with salt.
Whisk remaining olive oil in cup into lemon-juice mixture. Season dressing to taste with salt and pepper. Add dressing and cheese to kale mixture; toss to coat. Season lightly with salt and pepper. Garnish with almonds.

Fresh Spring Rolls
Ingredients
Fresh Mixed Greens*
Fresh Basil*
Fresh Mint*
Freshly picked viola flowers*
Green Onion*
Avocado
Red, Yellow, Orange Bell Pepper
Carrot
Red Cabbage
Cucumber*
Vermicelli Noodle
Spring Rolls Skin (Round Rice Paper)
Mae Ploy Chili Sauce
Fresh lime
Nut Butter (We like Sunflower Butter)
Pick a generous amount of Tower Garden Greens and cut into small strips. Julienne other vegetables and put them aside. Cook the Vermicelli Noodles for the specified time. Soak one Spring Roll Skin at a time in warm water for no longer than 30 seconds and drip excess water off. Arrange ingredients in the middle of the paper with the loveliest, most colorful additions at the bottom. Add a large pinch of Vermicelli Noodles and close as tightly as possible, like how you would roll a burrito.

Fresh Caprese & Edamame Hummus
Ingredients
Tomato
Mozzarella balls
basil from the Tower Gardens
Edamame Hummus
Cooked Edamame
Salt to taste
Garlic
Artichoke hearts
Tahini
Pita chips
Place caprese ingredients onto a skewer or toothpick.
Combine Hummus ingredients in a blender or food processor until smooth. Spread on a pita chip and garnish with herbs from the tower garden. Enjoy!
Asian Lettuce Wraps
Ingredients
White Onion
Green Onion*
Water Chestnut
Miso
Walnuts
Sriracha Sauce
Rice Vinegar
Tamari Sauce
Honey
Peanut Butter
Bell Pepper
Portabella Mushroom
Garlic
Ginger
Carrot
Sushi Rice
Fresh lettuce leaves*
Hoisin Sauce
Heat the olive oil in a large heavy-bottomed skillet over medium-high heat until shimmering. Add the onion, bell pepper, and mushroom to the pan; stir to combine and spread the filling out in an even layer so the veggies sauté instead of steam. Cook for 7-8 minutes, stirring once or twice and spreading the filling back out evenly each time. Add the minced ginger and hoisin sauce; stir to combine and cook for 1 minute longer. Stir in the water chestnuts, green onions, and raw walnuts to the pan and cook until the green onions begin to wilt, about 1 minute. Remove from the heat.
Assemble the Wraps:
Layer lettuce leaves with sushi rice (if using), a heaping spoon full of filling and top with carrot ribbons, cilantro, and a sprinkle of sesame seeds.
